The durum wheat from which this pasta is made comes from the extensive and dry-farmed organic fields situated around El Planerón Ornithological Reserve in the Steppes area of Belchite, located in the Ebro Valley. Riet Vell buys pasta from these farms, which are supervised by SEO/BirdLife, and works to ensure a good price for the farmers. In terms of kilograms per hectare in these areas production is low, however the pasta produced is of very high quality and of very high nutritive value. The Steppes area of Belchite present a mosaic of varying crops, fallows and bush pastures that provide an excellent environment for under-threat species such as the Pin-tailed Sandgrouse, the Black-bellied Sandgrouse, the Eurasian Thick-knee and the Dupont's Lark.
